胃壁表面有很多由上皮细胞形成的皱褶构成了胃小凹，每一个胃小凹开口于四到五个胃腺盲端。当腺体分泌时，由压力增大，分泌物冲破粘液碳酸氢盐屏障，颈粘液细胞分泌的新的粘液随着腺体分泌物而排出，并汇合被冲到两侧的粘液碳酸氢盐屏障重新恢复并覆盖胃小凹。
